Enjoy an exciting experience discovering the ancient Sardinian cheese-making tradition at the Argiolas Formaggi company, a leader in the dairy sector in Dolianova, near Cagliari, in southern Sardinia. You will take part in a guided tour that will be a real journey through the history and secrets of Sardinian sheep's and goat's milk cheeses and witness the different production phases: milk analysis, the different recipes, salting in brine vats, maturing, and finally preparation, packaging, and shipping. You will be involved in an artisanal cheese-making workshop, with the possibility of creating the cheese and finally tasting it. In addition, at the end of the tour you will have a tasting of local products accompanied by a wine from the best wineries in Sardinia.
There will be stairs along the route: the experience is unfortunately not suitable for those with mobility difficulties.
The cheesemaking workshop, run by experts, consists in the preparation of the cheese in an artisanal way, with the possibility of creating your own cheese and tasting it or taking it with you. An educational and experiential experience that will allow you to discover the secrets of cheese making and its process step by step, from the coagulation of the milk, to the forming and salting. Fun and educational workshop for both adults and children with the delivery of a certificate for remembrance.
Argiolas Formaggi, leader in the dairy sector, for over 60 years the company has been producing pecorino and goat cheeses, focusing on innovation, attention to research, respect for tradition and commitment to environmental sustainability.
At the end of the experience, it will be possible to taste three or four of the farm's most famous cheeses, accompanied by a glass of a local wine. For minors or those who do not like wine, water will be available.
